In ancient times a cake was like a small flat mass of baked or fried dough. More bread like and sweetened with honey, nuts and dried fruits were often added. The beauty of these foods were that they could last for many months. Ancient Egyptians were the first culture to show evidence of advanced baking skills, according to food historians. Cakes are traced back to the 13th century. Fruit cakes and ginger breads, were a favorite of medival Europeans. Cakes as we look at them today have come a long way from ancient times. Refining processes on how flour was milled since ancient times to the present makes the flour today of better quality and the cakes fluffer.
